This is a great healthy summertime snack. The avocado was served chilled.
Tomato (preferably grape tomatoes or any small variety)
In a small bowl, combine the olive oil, chopped basil and chopped mint. Add lemon juice and sea salt to desired taste. Cut chilled avocado in half, squeeze a little lemon juice, fill the herb seasoning in the pit, add the chopped almonds and tomato, and more sea salt if you're like me and love salt. I didn't have any grape tomatoes on hand today, so I just used my regular sized tomatoes and diced them. Still tasted good...

I found some THICK bread at the bakery. It was Mother's Day, and although I do not have any offspring of my own, I do have 2 fukids. So, I thought I'd treat myself to one of my favorite breakfast foods - French Toast & Eggs.
